OUR BREWERY

Plank Town’s brewery setup has expanded to include a 10-barrel brewhouse on site with three conical fermenters, three 20-barrel fermenters, and four conditioning tanks. Our dear Van Vetter dairy tank has moved on to ferment some farmhouse beer at Agrarian Ales.

The Plank Town Brewing design and setup was an achievement in stainless choreography that paralleled the craftsmanship in other aspects of the restaurant. Given a set of physical and financial parameters, experienced brewmaster Steve van Rossem (of High Street, West Bros. and Block 15 fame) dived into the challenge of designing a brewery that was primed for easy expansion and upgrade.

Given the organization’s philosophy about sourcing local components, Steve latched onto the fledgling but solid Oregon craftsmen, Practical Fusion, based in Canby, Oregon, to custom-build a mash tun, kettle, fermenters and conditioning tanks to his specs.

Working with Practical Fusion and a variety of smaller suppliers who helped piece together a fully functioning system from materials both new and repurposed, Steve was able to design and create a quality, no-frills 10-barrel system with jacketed fermenters capable of producing both standard ales and longer-fermenting lagers.

With 20 taps available, van Rossem and assistant John Crane are able to offer at least 12 distinctive house-brewed beers on tap at any given time while also providing a selection of local/regional guest brews to embrace the burgeoning Eugene-Springfield brew scene. Two beer engines pour a rotating selection of both house- and guest-brewed cask-conditioned ales.

As more equipment and storage space becomes available, Plank Town will offer more beer through local outlets, and we'll eventually produce an extended line of barrel-aged and sour beers.
